Are you looking at the industry segments - or the consumer segments.

If it is the latter, then look to likes and dislikes - and what people want when they stop for a coffee. This will have some bearing as to what companies will have established themselves there.

On a non-scientific level, look at what the competition is offering, style of service, ambience, location, coffees on offer etc. Running down the list of companies in the area and doing this for each (which might include a visit of course) you will find that there is some element that is not served.

Tying this in with the kind of people who frequent the area - which if it is close to Rondebosch - should be pretty posh. It isn't that far from UCT either.

Easiest might be to go to a coffee bar nearby and start to make a list of the kinds of customers you see there. Segments could be based on likely purpose of the eating occasion: regulars/friends, business associates, romantics, gender combinations, solos, readers, texting/online folks, etc.

If that doesn't give you enough specificity, you can interview people leaving the coffee bar(s) and ask a few questions about the nature of their visit to the establishment. It shouldn't take too many of these to identify the main segments.
