I would work your prior contacts from your experience. Most consultants I know seem to start by doing work for companies they used to be employed by, and expand from there. Check with past contacts on the type of work they need and see which you have appropriate skills for. Not only will this help you answer the question you asked, but it will also get you business.

I'd like to expand on Peter's advice. You'll know what you did well and who you did it well for. There will be a commonality somewhere in the mix - some kind of resonance between you and them that made everything work that little bit better.

This, along with who these people are and what you can do for them is important in determining your USP - your unique selling proposition. You need it as much as any product, only being live you've got some real advantages, you're unique to start with. Don't worry about it getting you into trouble - mine does, right here on this forum - yet questioners still respond to it well. Not always, but enough to know you're getting something right. It also forms a strong delineation between your better customers and those who are not a good match. It helps to have this reflection of your self confidence when stepping into what seems like a wide blue ocean.

Believe me, you've got tons more than me when I started! Courage!
