Existing Deli/catering/bagelry/pizza Shop

We have just scored ourselves a 20 year lease after being in business for the previous 20 years under other family members. We are now looking to bring our catering business up to speed. Right now our business is 95% walk in 5% catering. We would like to be 75% walk in 25% catering. We are located in an exclusive neighborhood of Washington DC. We sit on the border of Maryland and would like to do more catering in Maryland. We have decided to offer a bigger vegan/vegetarian menu and would like go after that group. We are well equipped to take on more business but just need a jump start to make it more appealing and catchy.
