Some existing names might help spur your creative side:

Texas Land & Cattle (Black Angus steaks)

Love & War in Texas (Steaks from all over the state of Texas with wild menu opitions such as Javalina hog, quail, etc.)

Valacito Ranch (Out of Business, but had an upscale flavor to it)

III Forks (very upscale Steaks)

Just Steaks (menu just steaks or beef entrees)

T-Bones (name says it all)

Ribeye Rob's (or your own name with Ribeyes as the special menu)

Paradise Beef (maybe a spin on Jimmy Buffet's Cheeseburger in Paradise, with a tropical theme. Maybe even beef from various locations)

BeefHouse (all steaks and beef)
