The number of people through the door and the number of sales assistants are not relevant to your real question, unless you can hire and train more sales assistants. Otherwise you simply need to increase the conversion rate.

For that you need better sales training and/or a better offer/product. Assuming you can't affect the offer or product, you're left with better sales training.

You'd need to help the 3 assistants do a better job of closing sales with the prospects as quickly as possible, so they can serve (and close) more customers.

You need to figure out why people aren't buying. You have a lot of customers coming in. What are they coming in for? Are they looking for service with a product they already have or are they trying to sign up for new service.

You need to figure out why a customer is there quickly and get them directed to the right person for help. At our cell phone store more than half the people are current customers trying to resolve issues with their current service/phone. These people obviously need to be helped, but perhaps in a different way.

If people are leaving without being helped you need more staff or need to be more efficient. There is no way around this.

In some ways the information you have given does not allow for anyone to assist with an answer that is other than general sales knowledge.

Since you seem to have tracked the average number of people that come in to your store, have you broken down the sales opportunities from the current customer and or service visits? Having 3 sales associates, and I would assume yourself as well, deal with 350 customers in a day would be approx 88 customers each.
It would be unlikely in your setting that all of these were sales opportunities.

The question at hand seems to be how to increase your conversion rate. It may already be great! Do you view a conversion as simply a completed customer transaction or interaction? Are we talking converting an opportunity to a new sale?
It is really great for the forum to look at this since I think we all at times need to look at the quantifiable difference between our traffic flow and our true opportunities to generate new or same store sales!
